Chicken and Asparagus Stir Fry

When it comes to dinner recipes, I always consider the ones that use minimal pans and utensils the winners.

This recipe for chicken and asparagus stir fry is adapted to be gluten free from SkinnyTaste.com – it’s healthy, delicious and doesn’t result in a full sink of dishes. Can I get a ‘woo woo?’

Ingredients:

  • 1 ½ pounds skinless chicken breast, cut into 1-inch cubes
  • Kosher salt, to taste
  • ½ Cup chicken broth (Pacific is gluten free)
  • 2 Tbsp. soy sauce (La Choy soy sauce is gluten free)
  • 2 tsp. cornstarch
  • 2 Tbsp. water
  • 1 Tbsp. Canola, Grapeseed or Safflower oil (I used Safflower oil in my dish)
  • 1 bunch asparagus, ends trimmed, broken into 2-inch pieces
  • 6 cloves garlic, chopped
  • 1 Tbsp. fresh ginger
  • 3 Tbsp. fresh lemon juice
  • Black pepper, to taste

Chicken and Asparagus Stir Fry

Instructions:

1. Combine cornstarch and water in a small bowl and mix well.

2. In a second bowl, combine the chicken broth and soy sauce.Cut your chicken breasts into 1-inch cubes. Season with salt (I didn’t have Kosher, so I used Sea Salt). Set aside.

3. Heat a large non-stick wok or pan over medium-high heat. Once hot, add 1 tsp. of Safflower oil and asparagus – heat for about 4 minutes, then add the minced garlic and ginger and cook for an additional minute or so. Set aside.

*Tip: I mince my garlic and ginger in the food processor. It makes the whole chopping thing go by WAY faster!

4. Add the soy sauce mixture to the pan and bring to a boil for about 1 ½ minutes. Add the lemon juice and cornstarch mixture, stirring well. When the combination begins to simmer, add the chicken and asparagus back into the mix and stir well.

5. Once chicken and asparagus are combined with the sauce mixture, remove from heat and serve.

This meal would go well with a baked potato, or possibly even adding in brown rice or quinoa as your grains — you decide!
