Easy Chicken Parmesan Bites

When life gives you chicken, make chicken parmesan bites!

I came across this recipe for Parmesan Chicken Bites on the Damn Delicious blog and knew it would undergo a gluten-free transformation for the sake of my taste buds. Seriously, how would you not want to eat something with the words parmesan, chicken, and bite in the title?

I love taking so-called ‘normal’ recipes and putting a gluten-free twist on them. For these bites, it was fairly easy—all you have to do is get gluten-free panko and gluten-free flour! Check out the rest of the ingredients below and get your party pants on, because it’s about to go down.

Ingredients

  • 1/2 Cup vegetable oil
  • 1 lb. boneless, skinless chicken breast, cut into bites (~ 1 inch)
  • Sea salt and pepper, to taste
  • 1 Cup Panko (I use Ian’s Gluten-Free Panko)
  • 1/4 Cup freshly grated Parmesan
  • 1 tsp. garlic powder
  • 1/2 tsp. smoked paprika
  • 1/2 Cup all-purpose flour (I use Namaste Gluten-Free Flour, found at Costco!)
  • 2 eggs, beaten
  • 2 Tbsp. Chopped parsley leaves

Chicken Parmesan Bites

Instructions

  1. Heat the vegetable oil in a large skillet on medium high.
  2. Season the bite-size chicken with salt and pepper.
  3. In a large bowl, combine the gluten-free panko, grated parmesan, garlic powder and smoked paprika. Add salt and pepper to taste then set aside.
  4. Dip chicken in the flour, eggs, and then panko mixture. You will have to do this in batches as you won’t be able to cook all of the chicken in the pan at once. I cooked about 5 pieces at one time in the pan.
  5. When cooking chicken, ensure the bites are golden and crispy—this may take 4-5 minutes depending on the size of each bite.
  6. Once chicken is cooked, place it onto a paper towel-lined plate to absorb the excess grease.
  7. When all of the chicken bites are cooked, garnish with the extra parmesan and parsley. I served with marinara sauce for dipping.
