You will be just fine with an 8mm or 7mm. The AC Rating is where you want to choose your durablity.

Manufacturers have different ways of determining thickness levels. Some laminate comes with underlayment pre-installed and manufacturers will include that underlayment in the thickness levels. Others won’t. Only use the thickness levels as a way to measure how the flooring will fit in your room.
